
I didn't expect this bread to be such a hit so I only have this one photo to prove it actually happened. It's a terrible pic but trust me - the bread is FAR from terrible. In fact, it's not only delicious (seriously delicious, I'm not just saying that) but it's also really good for your gut. It's high in protein, high in fibre, packed with plant points, and it's flour/gluten free. What's not to love?
Bake a loaf - your gut will thank you!
Ready? Let's go. Here's what you'll need:
500g cottage cheese (I used chunky but smooth works equally well)
300g oats (I use gluten-free oats)
1tbs baking powder
1tsp salt
50g flax seeds (I didn't have flax so used chia which worked like a bomb)
50g sunflower seeds
50g pumpkin seeds
Preheat oven to 180°C and grease a bread tin (if you intend to use one - not required)
In a large bowl, mix all the ingredients together until it forms a wet dough (I mixed by hand)
Mould into a bread-loaf shape and place on a baking tray or place dough in greased bread tin
bake for 1 hour at 180°C
