Ooey gooey good for you chocolate brownie cake
1 egg
2/3 cup greek yoghurt
3 tbs cacoa powder (I sometimes use less)
1 tbs protein powder
1 tbs sweetener (optional) - I usually leave this out as it's sweet enough with the protein powder for me
I sometimes add 1 tbs chia seeds and1/4 cup gluten-free oats (both optional). If this makes the cake too dense / dry for you, add a dash of liquid (water, milk or more yoghurt) OR if you are trying to keep your fibre down due to a UC flare, leave these ingredients out or
I sometimes add blueberries for extra sweet bursts (and blueberries are SO good for you)
I line my bowl with spray and cook for easier cleaning but it's not essential
Mix all the ingredients together in a microwave-safe bowl, mug or dish
Cook in the microwave for 2 minutes on high
Leave it to cool for a few minutes and either share with a loved one or keep it all to yourself
ENJOY!!
